What metro area are you in? My bf and I like going to musicals and whiskey tasting at bars and farmers markets and the other day he took me to paddle-boating at the park. (That was a fun surprise. I like being out on the water.)
Also I like road trips to national parks but he's less into that so we only do it once or twice a year. He really likes trivia nights, but I think they're boring, so same story. Takes a little effort to have a good attitude about otherwise un-interesting activities but totally worth it to see him have a good time.
